Simply Summer BLT Salad

This salad brings me back to summer as a kid, eating BLT sandwiches and playing barefoot in the yard and working in the garden. I can’t get enough of these simple flavors. It’s so easy to make, and if you make it once, I have a feeling you’ll be making it all summer long.

Equipment: plastic bag, bowl, glass jar or small bowl, tongs

Ingredients

  • 1 large head of Romaine lettuce, washed and chopped
  • 3 to 4 Roma sized tomatoes (use your favorite) sliced into wedges
  • 5-6 slices of bacon, cooked and chopped finely
  • 1/3 cup mayonnaise
  • 1 & 1/2 tablespoon red wine vinegar
  • 1 & 1/2 tablespoon extra virgin olive oil
  • Salt, to taste
  • Black pepper, to taste

Preparation

Step 1

Prepare the Dressing: In a small bowl or jar, combine the mayonnaise, red wine vinegar, extra virgin olive oil, salt, and pepper. Whisk or shake well until the dressing is smooth and evenly mixed.

Step 2

Mix the Salad: Place the chopped Romaine lettuce, sliced tomatoes, and chopped bacon into a large, sealable plastic bag and mix.

Step 3

Dress the Salad: Pour in the prepared dressing and reseal the bag securely. Shake gently until all the salad ingredients are evenly coated with the dressing

Step 4

Plate and Serve: Use tongs to plate the salad directly from the bag, or serve in a salad bowl. Serve immediately.
